Merengues de café

Coffee meringues to brighten up your afternoons

One of the most traditional appetizers

with a special twist.

We all know the delicious flavor of meringues and since we were children this has been one of the sweet treats that cannot be missing at family gatherings. At Viaggio Espresso we give a coffee twist to those recipes that remind us of our home. Follow the step by step with us!

Ingredients

  • 4 egg whites.
  • 100 grams of sugar.
  • 10 ml of coffee with your choice of flavor : Caramel , Vanilla or Chocolate .
  • Cupcake paper molds.

Steps to make the meringue

1.- First a syrup is prepared . To do this, mix the sugar with 40 ml of water in a saucepan, stir with a wooden spoon until it dissolves, heat until it reaches 120º. The correct temperature will have been reached when the bubble forms more slowly and bursts slowly.

2.- Let the syrup settle and then beat the egg whites. Before starting to beat, add the 10 ml of coffee and stir until a homogeneous mixture is formed. Then it's time to beat everything, until they start to be foamy. You can use an electric mixer or they can be beaten by hand but it will take longer.

3.- Once the egg whites and the coffee have risen and are beginning to foam, it is time to add the hot syrup, in a thread and without stopping beating. The objective is to obtain a firm snow point.

4.- After having preheated the oven to 135 degrees, it is time to put the coffee meringues . It is recommended to use a pastry bag to create the particular circular shape in the meringues.

5.- If you don't have a pastry bag, try doing it with a soup spoon. Put the tray in the oven for 15-20 minutes or so without closing the oven door completely, with heat at the top and bottom with air.

6.- Once the 15-20 minutes have passed, let them cool in the oven. And then let them rest before serving them.

And voila, you already have the perfect recipe to accompany your coffee afternoons!
