Friends left us two legacies: that coffee is better when shared with friends and that breakfast coffee is made in a Chemex. This coffee maker has stolen the camera in several scenes of the American series and it is not for less in the case of a work of art.

And we say work of art because this coffee maker is exhibited at the Museum of Modern Art in New York (MoMA) , due to its unique design: it simulates the shape of an hourglass, adorned with a piece of wood around its central part that also as decorative it serves as a handle. The Chemex is undoubtedly more than a filter coffee maker, it is a cult object for any barista.

THE SECRET OF ITS SHAPE

The Chemex coffee maker was invented in 1941 by Peter Schlumbohn with the goal of obtaining the perfect cup of coffee. He himself devised his design in order to extract only the desired parts of the coffee and that the most bitter remains do not reach the cup.

That's why every part of this coffee maker is thought out to detail . The glass of its body resists high temperatures and thanks to the conical shape of the upper part we can achieve the ideal filtering time to extract the desired nuances from the coffee. The filter used is particularly thick and this helps to prevent coffee sediments or oils from reaching the cup , thus extracting and filtering the most desirable aromatic compounds.

For the Chemex to work perfectly, two key ingredients are missing : quality coffee in the right amount and water at its ideal temperature. That is why we bring you the step by step to prepare this filter coffee like a professional.

WHAT DO YOU NEED TO PREPARE A CHEMEX?

Chemex of the desired size: 3, 6, 8 or 10 cups. (See options)

Chemex paper filter. ( 3 cups or 6 to 10 cups )

Gooseneck kettle. (Special for filter coffee). (See options)

Scale with stopwatch. (See options)

Coffee grinder. (See options)

Coffee beans. We recommend you try it with specialty coffee (See options) or commercial coffee. (See options) . You can also use ground coffee with a medium size.

STEP BY STEP TO PREPARE A CHEMEX :

INGREDIENTS:

20 g ground Viaggio Espresso coffee of your choice

320 ml of filtered water at 93ºC

Infusion time: 4-5 min.

Grind: Medium

Ratio: 1:16

INSTRUCTIONS:


Step 1: Unfold the chemex filter .

Step 2 – Place the filter making sure all 3 layers are on the spout side of the bowl.

Step 3: Completely moisten the filter with hot water and discard any water that has fallen into the container.

Step 4: Pour 20g of medium ground coffee into the filter.

Step 5: Using the kettle, add twice as much water (40 ml) and let it infuse for 30 seconds. Pour the remaining water (280 ml) in 4 times making circular movements.

Step 6: Let the coffee filter in the container.

Step 7: Remove the filter for disposal.

Step 8: Enjoy your coffee!
